For many years, I (Mike Cowlishaw »)
have been bringing home tins of fabada asturiana » from Spain to enjoy between trips to Asturias.
Though never as good as when eaten in a local restaurante, many
are quite acceptable.
Here are my ‘tasting notes’ on tinned Fabada Asturiana. Click on any image for a larger version. Currently the best seems, to me, to be O·Villa, closely followed by Campanal (especially the Especial). Naveda is also good. (There is a separate page for a few related tinned foods.) UK sources:
ALBO (2019) Ingredients and same as 2013, nutrition slightly different (137 kCal).2019.10.10 half can baño maría 30 minutes (stirring every 10) in plastic bowl. 2019.12.16 defrosted half can, prepared same way; a bit mushy; maybe try microwave again, at mid-power? ALBO (2014) Ingredients and nutrition same as 2013.
2015.05.18 Whole can; baño maría 30 minutes (stirring every 10) in plastic bowl was fine. Enjoyable, though ⅔ was enough. ALBO (2013) 2014.03.21 ½ can (rest frozen); baño maría 20 minutes in plastic bowl (barely enough – next time try 25 minutes). One piece each of chorizo, ham, and morcilla (but enough to split to two portions). Beans good, meats not bad at all, much better than Litoral; enjoyable. 2014.05.21 Frozen and defrosted, then baño maría 30 minutes – temperature good. Definitely a bit mushier than straight-out-of-the-can, but good flavour. Ingredients: Large beans, cured bacon, blood sausage, chorizo, water, potato starch, sunflower oil, salt, spices, and paprika. Nutrition/100g: 130 kCal, protein 7g, carbohydrates 14g (sugars 0g), fat 5g (3g sat.), fibre 4, salt 0.8g. Can is 425g. (www.albo.es/productos/11/fabada_asturiana_644 ») Alteza (2015)
2016.03.18 ½ can (rest frozen); baño maría 30 minutes. One piece each of chorizo, and morcilla; ham was two pieces but almost all fat. Beans good, but overall not much taste and too greasy. Ingredients: beans (52%), water, tocina de cerdo (bacon, 3%), chorizo (3%), morcilla (3%), pork fat, salt, pepper. Nutrition/100g: 142 kCal, protein 6.4g, carbohydrates 9.7 (sugars 0.9g), fat 8.6g (3.6 sat.), salt 0.8g. ‘Serving size’ 215g (can is 430g). Campanal (2011) 2011.08.00 Microwaved (exploded!; next time try baño maría). Visible chorizo ×3, bits of ham, no morcilla seen. Beans a bit too mushy (possibly due to microwave), flavour OK. Ingredients: beans 55%, ham 4%, morcilla 4%, chorizo 4%, olive oil, salt, sweet pepper, saffron. Campanal Especial (2021)
2022.04.05 20 mins half can in baño maría (1 litre water for ‘red bowl’); OK but perhaps marginal, 30 mins better. Omitted the morcilla piece. From frozen but texture fine. Very good flavour.
2022.02.03 30 mins half can in baño maría. One largish piece each of chorizo and morcilla, with both fatty and solid ham pieces. Very good flavour, but even small pieces of morcilla noticeably bitter – next time omit. Campanal Especial (2023) 2024.02.14 25 mins full can in baño maría. As before; shared between two, it being Valentine’s Day; with white asparagus. Beans and sauce excellent, meat a bit flavourless, as expected.
Used metal mini-pan for the fabada; worked well. Spot temperatures: 17:47 24° 17:55 64° 18:00 68° 18:05 77° (but sausage 65°) 18:10 77° (sausage, too) Ingredients: beans 45%, chorizo 6%, morcilla 5%, panceta 5%, lacón 3%, olive oil, salt, sweet pepper, saffron 0.001%. Nutrition/100g: 158 kCal, protein 5.9g, carbohydrates 9.7 (sugars 3.1g), fat 9.7g (3.5 sat.), salt 0.75g. Diamir (Not seen in Spain, but available UK.)
2024.11.11 From The Tapas Lunch Company. Microwaved 66+66 and came out well. Not bad at all, if a little salty. 420g can had 2×morcilla, 1×chorizo, and 1×ham (all tasteless as usual). Ingredients: beans 53%, sauce, salted pancetta 4%, chorizo 3%, morcilla 3%. Nutrition/100g: 128 kCal, protein 6.5g, carbohydrates 12g (sugars 1.1g), fat 6.1g (2.2g sat.), salt 1.38g. 2023.02.27 30 mins half can in baño maría. One largish piece each of chorizo and morcilla, with very fatty belly pork. Watery and lacking in flavour, also beans had tough skins. Ingredients: Prime white beans (37%), water, Iberian pork belly (5%), chorizo (5%), morcilla ahumada (5%), corn starch, salt, paprika. Nutrition/100g: 165 kCal, protein 8g, carbohydrates 13g (sugars 1g), fat 9g (4g sat.), salt 0.8g. Litoral (2024)
2025.01.10 ½ can (rest saved); microwave 2×2 minutes on medium. One piece each of chorizo, ham, and morcilla. Beans OK but rather small, meats had some flavour and edible (skipped the morcilla), sauce bland. Ingredients (changed since 2012): beans 19% & cooking water 26.9%, cured chorizo 6.0%, morcilla curada 5.5%, panceta ahumada 5.0%, iberíco pork fat, salt. Nutrition/100g: 130 kCal, protein 6.5g, carbohydrates 7.5g (sugars 0.8g), fat 7.4g (3.3g sat.), fibre 3.8, salt 0.87g. ‘Serving size’ 300g (can is now 420g). Litoral (2012) 2013.02.10 ½ can (rest frozen); baño maría 20 minutes in plastic bowl (15 minutes, as for tin, not enough). One piece each of chorizo, ham, and morcilla. Beans OK, meats almost tasteless, sauce bland and a bit slimy. 2013.06.10 Frozen and defrosted, then microwaved 2 × 2:00 minutes on medium. Beans mushy, meats as before (tasteless). Ingredients: beans & cooking water, cured chorizo 5.9% – papada y magro de cerdo, pimentón, sal, ajo, morcilla 5.5% – tocino, papada, magro y sangre de cerdo, cebolla, pimentón, sal, orégano, smoked bacon, iberíco pork fat, salt. Nutrition/100g: 144 kCal, protein 6.1g, carbohydrates 7.9g (sugars 0.7g), fat 8.6g (3.2g sat.), fibre 5.2, sodium 0.34g. ‘Serving size’ 300g (can is 425g). Naveda (2022)
2022.09.08 ½ can, baño maría 30 minutes (stirring
every 10) in plastic bowl.
Ingredients: Asturian beans (47%), water, Asturian chorizo (8%), Asturian morcilla (8%), panceta curada de cerdo (8%), olive oil, pimentón, salt, pepper. Nutrition/100g: 209 kCal, protein 5.2g, carbohydrates 20g (sugars 1.1g), fat 12g (4.5g sat.), salt 0.7g. Can is 420g. O·Villa (2023) 2023.03.31 Bought in Llanes near square; €5.10.
2023.06.11 ½ can, 25 minutes (20 would have been fine) baño maría in metal ‘chocolate’ bowl. Sauce, beans, and meats all good and excellent flavour, nicely balanced except very salty (almost twice as much salt as most). Ingredients: Beans (43%), water, panceta (bacon, 7%), lacón (7%), morcilla (black pudding, 5%), chorizo (5%), iberian pork, olive oil, spices, and paprika. Nutrition/100g: 176 kCal, fat 11.5g (5.7g saturated), carbohydrates 5.6g (sugars <1g), fibre 6.6g, protein 9.6g, salt 1.3g. Can is 380g. |
